CAJUN DIRTY RICE

Ingredients

  • 3 c. Parboiled rice

  • 6 c. chicken broth

  • 1 tub chicken livers, finely chopped

  • 1/2 lb. ground beef

  • 2 tbsp. butter

  • Yellow Onion, finely diced

  • Green Bell Pepper, finely diced

  • Celery, finely diced

  • Garlic, minced

  • 1 tbsp kitchen bouquet

  • 1.5 tbsp. Cajun Salt (LouWe.siana Blends)

INSTRUCTIONS

  1. Add a tbsp of cooking oil, onion, bell pepper, and celery (the trinity) to the bottom of your dutch oven and turn to medium heat.

  2. Cook down the trinity until soft and the onions are translucent.

  3. Add garlic to open up the aeromatics.

  4. Mix in and brown the ground beef and minced chicken livers. Break up any chunks of meat as needed.

  5. Drain the fat off the meat mixture and add back into the dutch oven.

  6. Add butter, Kitchen Bouquet, and season well with Cajun Salt.

  7. Add the chicken broth and taste and season more if needed. You’ll want this part to taste good.

  8. Add the rice, bring to a boil, and stir well.

  9. Lower to a simmer and top with the lid.

  10. Cook for approximately 20 minutes, stirring once at the 10 minute mark.

  11. Taste, and add additional Cajun Salt if needed.

You can serve immediately or cook ahead of time and refrigerate until ready to serve. Warm in the oven as needed. Well seasoned food is ALWAYS better the next day. So don’t be afraid of leftovers. Freeze any leftovers in a freezer back with minimal air for future week night meals!
